My best from Ciara came down from NY to VA on Friday to spend the weekend with me. We have not seen each other in about 8 months so needless to say it was a jam packed weekend of fun! I am gluten free and she is mostly vegan which forces us to tap into our creative minds so we can have fun with our meals and desserts when we are together. Of course dessert is my favorite, so naturally I will start with our dessert portion of the weekend. (One of them anyways, can’t spoil you with everything right away) 🙂
If you have never checked out Alicia Silverstone’s The Kind Diet book, I highly recommend it. It’s very informative and has a lot of great recipes, whether you are vegan or not. And if you are gluten free like me, you can make substitutions as needed.
Here is the recipe for her out of this world Rice Krispie Treats that we made from her book this weekend.
Crispy Almond Butter Treats with Chocolate Chips
Makes; 9-12 squares
1 box brown rice crisps cereal
1 3/4 cups brown rice syrup
Fine sea salt
3/4 cup peanut butter or almond butter (preferably unsweetened and unsalted)
1/2 cup grain-sweetened, nondairy chocolate or carob chips
Pour the rice cereal into a large bow. heat the syrup with a pinch of salt in a saucepan over low heat. When the rice syrup liquefies, add the almond butter and stir until well combined. Pour over the rice cereal. Mix well with a wooden spoon.
Once thoroughly mixed and cooled to room temperature, stir in the chocolate chips. Make sure the mixture is cool, or you will end up with melted chocolate instead of chocolate chips in your treats.
In her recipe she uses peanut butter and almond butter as the alternative. I prefer almond butter so we went with that. You are more than welcome to be creative and add your own additions to the recipe. (ie: cranberries, walnuts, flaxseed etc…)
