I LOVE brown rice tortilla’s baked in the oven.  Perfect amount of crispness and flavor! (Side note: Seriously NOT a fan of corn tortilla.  Absolutely disgusting in my opinion!) So, if you are gluten-free, stick with the brown rice tortillas! Unless you have weird taste buds and enjoy corn tortillas.  They don’t even smell good! :/  Plus, for this recipe you will need the brown rice ones regardless.  Also, a regular whole wheat wrap is not going to work either for this recipe because it will not be a good stiff base.

Eggplant Tostada 
(per serving)

1 Brown rice tortilla (I used TJ brand)
Trader joes Eggplant Spread (or other spread of choice)
Goat cheese*
Fresh Parsley (adds a nice flavor)
Chopped sausage or chicken (I used turkey apple chardonnay sausage from TJ – so good!)
Chopped baby tomatoes

Directions
Preheat oven to 400 degrees
Put all  your toppings on your tortilla
Baked for 12-15 minutes
Eat. Be Happy! 🙂

*If you have trouble with dairy, goat cheese is a fantastic option.  It’s the easiest form of dairy for humans to digest since it is the dairy most like human milk.
